Perfect for the warm days ahead, this brilliantly delicate Captains' Table coffee is alive with the sweetly satisfying flavors of honey, simple syrup and the smile-inducing flavors and floral aromas of star jasmine, iris and honeysuckle sprinkled with sparkling citrus. While geographically these beans are from the Sidama region, this exquisite coffee's light, bright and tea-like flavors are usually associated with coffees from the Yirgacheffe area.
These heirloom variety beans were grown at altitudes of 6,000- to 6,500-ft by smallhold farmers in the Nansebo district. They were processed at Tulu Golla, a private coffee collection site and processing facility. Here, ripe fruit is depulped then submerged in fresh water for 72 hours to ferment and break down the mucilage layer of the fruit. The coffee is then vigorously agitated with wooden paddles to work the mucilage off and moved to a soaking tank for an overnight bath in clean water before being spread to dry in the sun. It's the classic coffee processing method in Sidama and Yirga Cheffe zones, perfect for the development of very sweet, clean coffees such as this one.
